Vulcan cooktop design and construction
A Vulcan griddle or hot top is a slab of steel heated from beneath by a row of gas burners, sometimes thermostatically controlled and sometimes run on plain manual valves. Hot and cold zones across the plate point to burners whose ports have carboned over or, on thermostatic models, to a thermostat or its sensing bulb that has drifted or been damaged. Pilots are another weak spot; they drop out when the orifice fouls, when hood exhaust or a door pulls air across them, or when a thermocouple wears out. Spatter and carbon that find their way under the plate slowly choke burners and air intakes. Service usually means pulling and cleaning burners, checking every pilot and thermocouple, and comparing each thermostat setting against a surface thermometer before deciding what to replace.

Send us the make, the model tag and what the appliance is doing. Some problems can be narrowed down before anyone drives over; most need hands on the machine.
Either a burner under that section is partly blocked, or its thermostat has drifted. Each burner's flame gets inspected and the plate is measured section by section with a surface thermometer.
Use Vulcan's guidance for your model and adjust for how hard the griddle works. Keeping spatter and carbon off the burners and pilot openings heads off most uneven-heat and pilot complaints.
